1 16 oz. bag frozen Cauliflower
8 oz. frozen Peppers and Onions Stir Fry
Salt & Pepper to taste
In a large Cast Iron Skillet, add just enough water to cover the bottom
Add Cauliflower, cook covered to thaw and steam Cauliflower until it is tender. (about 8-10 minutes)
Add the peppers & onions about 5 minutes after you start the Cauliflower.
Let the water evaporate, turn the heat off, add just enough Coconut oil to coat the pan, use a potato masher to break the Cauliflower and Peppers & Onions down to look like hash browns.
Turn the heat back on to medium, let the vegetables brown a bit, just like hash browns it does take a few minutes, but keep a close eye on them so they don't burn.
Once they start to get a bit brown, gently turn them and brown the other side.
